Quick dessert: pineapple pudding

1 Pint Full Fat Milk
2-3 tablespoon Custard Powder
2-3 tablespoon Sugar

1 Tin Pineapple Ring Tin (in syrup)
8-10 tablespoon Chopped Macadamia Nuts (can replace with Almonds or any nuts you like)
1 Pack White Chocolate Chip Cookies or any Crunchy Cookies
10 Chocolate Wafers

NOTE: I just make the custard and cool it in the fridge. The dessert is assembled & served right before serving not before

1. In a bowl add 4-6 tablespoon of the milk and mix the sugar and custard powder to make a paste ensuring there are no lumps
2. Heat the remainder milk in a non stick pan
3. Add the sugar custard paste to the milk pan and mix well
4. Keep stirring making sure the custard does not burn till it thickens up, normally 6-8 minutes – do not let it get too thick as it will thicken more as it cools
5. Remove of heat and allow to cool
6. In individual serving bowl break a 2-3 cookies into large pieces
7. Top with a sprinkle of the Macadamia nuts
8. Top with a 1-2 tablespoon of the Pineapple tin syrup
9. Next top with a whole Pineapple Ring
10. Whisk the custard well
11. Next top with a few tablespoons of the custard
12. Cut one pineapple ring into chicks and next top with pineapple chunks
13. Sprinkle with more nuts
14. Add two chocolate wafers on one side on the serving dish
15. Serve immediately
