With all the holiday cooking that we all do around this time of year, it can be hard to come up with some easy recipes to use up all the left overs without slaving in the kitchen all over again. But with all the good football games and family gatherings still going on after Thanksgiving, the good eats can still be had with very little fuss. Here’s a great recipe for some Smoked Turkey Nachos.
What you’ll need:
Smoked turkey, shredded, about 1/2-1 pound (you can substitute with fried or oven turkey)
Refried beans (for this recipe we used La Preferida Refried Beans with Spicy Chipotle, which I highly recommend)
1/2 cup sliced onion
1/2 cup sliced bell pepper (try to use various colors for a little flair)
Bag of nacho chips
Shredded cheddar cheese
Shredded mozzarella cheese
Finely chopped green onions for garnish
Salsa, such as our homemade salsa
Start out by lightly sauteing the sliced onions and bell peppers in olive oil. You don’t want them to get too soft, so only go a few minutes, just until they start to sweat a little.
Place a pile of nacho chips on a large cookie sheet. Layer the refried beans, onions, peppers and shredded smoked turkey over the nachos. Then spread a layer of shredded cheddar cheese and a layer of shredded mozzarella cheese. A few sliced jalapeno peppers would go nicely on the top, if you like a little heat! Place in the oven or your BBQ pit, if you happen to have it fired up, and bake until the cheese melts and everything starts to get a little crispy, around 10 minutes at 350 degrees.
Serve a heaping plate topped of with salsa and chopped green onions.
